Strawberry and Goat Cheese Bruschetta
Serves: 10
Ingredients
1 whole wheat baguette sliced
2 tsp olive oil or more to taste
1 pinch salt to taste
1 pinch black pepper to taste
1/2 cup strawberries stems cut off and sliced thin
1/2 cup goat cheese
1 tbsp basil chopped
2 tbsp balsamic glaze (1/2 cup balsamic vinegar,
3 tablespoons honey or maple syrup)
Instructions for Bread
- Preheat oven to 400 degrees F. Line baking sheet with parchment paper. Place sliced baguette pieces on the parchment paper, about 1 inch apart, and brush the tops with olive oil. If desired, lightly season with salt and pepper.
- Bake bread for 5 minutes or until edges look golden brown. Be careful not to toast the bread too much.
- While bread is still warm, sprinkle (or spread) goat cheese on the sliced baguette. Arrange sliced strawberries on top, then sprinkle with basil. Finish by drizzling balsamic glaze on top.
Instructions for Balsamic Glaze
- Add ½ cup balsamic vinegar and 3 tablespoons honey or maple syrup to a small saucepan set over medium heat.
- Once the mixture begins to bubble, reduce the heat to medium-low heat and allow to simmer until reduced by half, about 10 minutes. Remove from the heat and set aside to cool before serving.
